Christmas Through Lowell 2011

Peppermint Hot Chocolate
•3 cups nonfat dried milk
•1 cup powdered sugar
•3/4 cup cocoa powder
•1/4 tsp salt
•1/2 cup chocolate syrup
•1 to 2 tsp peppermint extract
•7 cups water
•marshmallows and candy canes for garnish

1.Combine the dry ingredients into your crockpot and stir with a spoon. Squeeze in a half-cup of chocolate sauce, and add the peppermint extract.
2.Add the water, a cup at a time, and stir well.
3.The chocolatey mixture will be bubbly and look powdery.
4.Cover and cook on high for 2-3 hours, or until completely hot.
5.Serve with marshmallows and candy canes.
6.If serving to guests, keep the pot on low with the lid off, and provide a ladle. If kept on warm, the hot chocolate will not stay warm enough.

Chocolate Chip Cookie Dough Dip

1/2 cup (1 stick) margarine
1/3 cup brown sugar
1 teaspoon vanilla
1 (8 ounce) package cream cheese
1/2 cup powdered sugar
3/4 cup milk chocolate chips

Directions:
  1. 1 In a small saucepan, melt the margarine and brown sugar.  Stir until the brown sugar dissolves.
  2. Remove from heat, add vanilla, and cool completely.
  3. Beat the cream cheese and confectioner's sugar until smooth.
  4. Slowly beat in the cooled margarine blend and continue until smooth.
  5. Stir in the chocolate chips.
  6. Place in serving bowl and refrigerate.

Not Your Grandma's Fruitcake

1 box graham crackers
1 box raisins (1 lb)
1 bottle cherries drained & cut
1 lb pecans
1 can sweetened condensed milk (1 cup)
1 lb marshmallows melted
1 tsp vanilla

Lightly coat a 9x13 baking dish with cooking spray.  Roll the graham crackers into fine crumbs.  In a large bowl, quickly combine all of the ingredients.  When ingredients are all mixed well, transfer into the prepared pan and place in the refrigerator.  Let chill 2 hours.  Cut into bite size pieces and serve.
